Well, did Cathrine write the name and address of the murderer someplace in the room. She might have bit her finger and used her own blood. Or, if she had a pen or something.

b) Every waitress has a pen and a notebook.  She took her notebook and scribbled "Buffalo Bill wants to kill me.  I offer one free pizza to whom saves me".

Maybe while BB was skinning Catherine, he left some blood on the floor. Police traced that blood to Catherine and found a bit of BB's knife in it. They then found the knife to be BB's.

The police found the killer because he is a serial # killer,  and he hit her on the head very hard with the butt of his revolver, and that the serial number of his gun is engraved on the butt of the gun and left a bruise or imprint on her head, then Sterling traced BB through the registration of the gun. Maybe....

OK, 2 ideas:
 
1. Starling discovered that Catherine has been butchered in the exact way Starling's husband uses to do with the Thanksgiving turkey.  He was arrested and confessed.
 
2. (with a "bit of luck").  Starling saw someone watching from the window.  He was arrested, and later a search of his house revealed pictures of the murder scene.  It is well known that a criminal always returns on the crime scene.

If she had enough time, she could have spelled out his name with her fingerprints.  They would be nearly invisible without the police using revealing techniques (dusting, different compounds, etc.), so BB wouldn't see it.

I remember reading something to that effect years ago about a woman who had been kidnapped and, as it happened, chained up in the bathroom.
She touched everything to make sure her prints were there.
She left prints on the middle-underside of the toilet lid.
She spelled her name on the mirror using prints.  Poor girl.
 
She ended up escaping, relatively unharmed (no lasting physical damage...wish I could say the same for emotional).
 
Anyway, that's how I guessed what I did.
