swedish almond cookies

ingredients (makes about 100 cookies):
1 lb. butter, softened
1 1/4 lb. ground almonds
1 tsp. vanilla
1/2 tsp. salt
1/2 c. sugar
3 1/2 c. flour
flour for rolling
powdered sugar, for coating

directions
Preheat oven to 250 F,
Grind almonds in food processor.
Mix all ingredients (except powdered sugar) by hand in a large bowl.
Roll into 'snakes', 1" diameter and 3/4 the lenth of the cookie sheet.
Place snakes 1/2-1 inch apart. Cut into 1/2" slices.
Gentrly separate. They do not need to be very far apart.
Bake for 1 hour.

Let cool and roll in powdered sugar.
They keep well in tins and make good christmas presents.
