Imagine you are standing in front of a mirror, facing it. Raise your left hand. Raise your right hand. Look at your reflection. When you raise your left hand your reflection raises what appears to be his right hand. But when you tilt your head up, your reflection does too, and does not appear to tilt his/her head down. Why is it that the mirror appears to reverse left and right, but not up and down?

The mirror is reflecting back the light waves bouncing from your body. It isn't reversing anything.

The reflected image is reversed as compared to the model. But what is reversed is not the left and the right, it is the front and the back.

Let, you are standing on the positive xy plane and your head is towards the positive z axis. if the positive xz plane is the mirror then only the y axis is reflected on it. so the left seems right on the reflection. [someone might want a rigorous explanation of this which i skip here ] but if the xy plane was the mirror. that is if you are standing on a mirror then when you jump up. your image jumps down! because this time the positive z axis is reflected. only this time the "up is down' effect is observed.

There is only a one logic. Nothing is reversed in this. The light which is reflected from mirror is getting bounced from your body.
